Winemaking:
The grapes from which this wine come from our vineyards in the Uco Valley in Trees, 1,200 meters above sea level. The climatic and soil conditions in these areas are warm days, cool nights and sandy loam soils that make these vineyards to develop in its fullness the delicious aromas and flavors of this varietal. In these vineyards are used in traditional systems of driving high trellis.
The vineyards date back to 1992 and have an average production of 9,000 kilograms per hectare. Harvesting takes place in the early hours in the morning to ensure a low temperature of vintage and boxes to avoid deterioration of the grains during transport.
For fermentation the beans are subjected to a crushing treatment of mild and placed in small volume tanks. Before fermentation begins, vintage descobajada is cooled to temperatures below 10 oC. (Cold maceration). Nose:
Complex nose with red fruits like cassis and blackberry, some dried fruit, reminiscent of pepper and eucalyptus.

Mouth:
The palate is robust, concentrated with sweet entry for his alcohol and tannins. In addition to the perceived nose adds a slight flavor of pencil lead, ripe fruit and some spice. Because of its structure is ideal for red meats, game and very spicy dishes with sauces.
